I answered these very quickly. Though there were some close seconds, I did't want to think too hard about this.
Here are just some of my 2nds: Palpatine/Sidious from ROTS was remarkable. I really like the Super Star Destroyer. Death Star super laser for a weapon... Boga would be fun to ride, though nerve racking on cliff faces. Twi'Lek women, oh I said that already, ha ha. I like the medal scene from the end of SW. Though there's plenty of battle scenes that are right up there. Other line I like the most: "I've got a bad feeling about this."

Star Wars: Episode IV: The Empire Strikes Back. Taken completely out of context and forgetting everything else you know about Star Wars, it's the only one that's a nearly perfect movie. (Toss Hobbie and it is perfect.)

Han Solo. He's a smarmy SOB, and shows the most evolution of any character aside from (possibly) Anakin/Vader.

Imperial/Federation Character?
Darth Vader. How can you pick anyone else?

Background Character?
Kit Fisto. Don't doubt the power of The Mighty GrinTM.

Planet?
Felucia. Even though we only see it for a couple of seconds, it looks a lot more alien than "City Planet" or "Snow Planet" or "Swamp Planet."

Star Ship?
The Millennium Falcon. Han's tricked-out hunk of junk. 'Nuff said.

Vehicle?
Republic Gunship. It's like a Vietnam-era chopper from the stars.

Weapon?
Han's tricked-out customized blaster. (Blastech something-or-other.)

Creature?
Dewback. I've always loved these guys, even when they were stationary and had hair on their backs. But now that they move and make noise, they're a million times cooler!

Species?
Jawas. I can answer that with more certainty than any other question here (aside from ESB being my favorite film). Stinky little rat things with glowing eyes who steal broken robots and cobble them together just well enough to pawn them off on unsuspecting humans. They rock!

Droid?
TPM-era Battle Droid Commanders. They're just smart enough to not be walking guns, yet dumb enough to say really stupid things (without going over the top, as they did in AOTC and ROTS). "Coruscant? Uh, that does not compute. Wait--you're under arrest!"

Scene in the movies?
God, this one really is tough. There are five moments I love, all of which are really subtle. I'll give my favorite, but I've got to list the other four, because it's so close that even two minutes from now, I could change my mind.

1) Vader looking back and forth from Luke to the Emperor as Palpy fries his son and some of John Williams' most powerful music ever plays. He's clearly realizing what a tool he's been and deciding to make up for being a deadbeat dad for 20-odd years.
2) Vader dejectedly walking past Admiral Piett when the Falcon escapes, rather than strangling him and promoting someone else to take his place. Ignoring the prequels, this is the first time the audience realizes that there is a human being with real thoughts and emotions behind the black mask.
3) Bail Organa watching the procession of Clonetroopers and hitting the balcony in resignation. That is the best Easter egg for hardcore fans, not Aayla Secura's cameo or the Outrider.
4) The click of Vader's mask snapping in place for the first time, followed by the hollow breathing. The moment we sat through six hours worth of movies to see.
5) The close-up of the japor snippet on Padme's body as the procession winds through Theed. That single second or two of film conveyed more emotion than the rest of the prequels combined.

Just about as tough a decision as the last question; I'm going between wisdom from Yoda and sarcasm from Qui-Gon. I'm going with Yoda's "Luminous beings are we, not this crude matter" over Qui-Gon's "The ability to speak does not make you intelligent" by a very narrow margin.
