Looks to me like the bigger variation is the paint ops on the head. Two completely different patterns (if this is the same figure of course)

Yeah, but that's already been defined. Hasbro did a 2nd run of Maul figures with a more movie-accurate face, but the paint app didn't take into account how wide the face should be and we were given "fat face Maul", which I believe comes on a totally different Hasbro item number even though it's the same Ep 1 card. Normal fat face Mauls have both their ears.
