My all time favorite has been and allways will be Buba Fatt's (as yet) unproduced "Spirit of Hammerhead in Stormtrooper Disguise in Carbonite.
As far as actually produced figures of this ilk are concerned, I am torn between the B'omarr Monk and Oola w/Salacious Crumb. Both are great in their own right, but ultimately the B'omarr Monk has the advantage for being so unique. I wonder if we would ever have had this figure but for its Fan Club release.
