Ok,
I went through and got the best shots I could of the Jedi igniting their sabers. I did manage to get a shot of "Duckman".....who I think isn't a duck at all, but a Mon Calimari mask reworked a little.

To me the Duck guy looks like they've taken a Mon Calimari mask, and pulled the eyes down by the side of the mouth. Doing that created the appearance of the duckbill. They've also added a bit larger "ridge" in the middle of the forehead. I posted pics of the same mask from the Coruscant chase scene. This guy is seen as Zam's speeder is falling from the sky, before Anakin jumps off.

I noticed the pic you posted of Eeth Koth and I remembered back when I first saw him in EPI and when his POTJ fig came out. So, I've been pondering, is Eeth Koth the same race as Darth Maul? It's the little horns they got.
